Saboodana Kheer
Indian Style Tapioca Pudding
Serves 4
Preparation Time: 2 hrs.
Cooking Time: About 25 mins.
- Ingredients:
- ½ cup tapioca
- ¼ cup water
- 3 cups whole milk
- ¼ cup sugar
- ¼ teaspoon cardamom, shelled and ground
- For garnish:
- 1 tablespoon raw pistachio, finely chopped
- Method
- Rinse tapioca 2 to 3 times and let it soak in 1/4 cup of water for two hours in a covered pan. (The water should get absorbed in the process).
- Boil milk over medium high heat, stirring occasionally to prevent scorching of sauce pan at the bottom. Turn heat to medium low and let milk boil for another 10 minutes. Add tapioca, stir and cook for 6-7 minutes until tapioca turns translucent, continuing to stir occasionally. Add sugar and cardamom, stir and cook for another 2 minutes.
- Garnish with chopped pistachio.
- Serve hot or cold.
